Calculations are based on an estimated hanging weight of 750 lbs. A half share is estimated at ~375 lbs hanging weight, with a 60–65% yield after bones, excess fat, and trim are removed during butchering.

A substantial portion — often 30–40% of the total. 1-lb portions with an 85/15 lean-to-fat ratio.

Premium Steaks

30+ lbs

Ribeye, New York Strip, and Filet Mignon (Tenderloin). The showcase steaks.

Other Steaks

Sirloin, Flat Iron, Skirt, Flank, Chuck-Eye. Great versatility for grilling, pan-searing, or stir-fries.

Roasts

30–50 lbs

Ideal for slow cooking: Chuck, Rump, Sirloin Tip, London Broil, Brisket.

Stew Meat & Short Ribs

Pre-cut chunks perfect for stews and slow-cooker meals, plus short ribs excellent for braising.

Bones & Specialty
