The actual math.
Calculations are based on an estimated hanging weight of 750 lbs. A half share is estimated at ~375 lbs hanging weight, with a 60–65% yield after bones, excess fat, and trim are removed during butchering.
What's in your share.
From a half share (approximately 225–245 pounds of take-home meat), you'll get a wide variety of cuts. Proportions vary based on animal size and your cut sheet choices.
Ground Beef
70–100 lbsA substantial portion — often 30–40% of the total. 1-lb portions with an 85/15 lean-to-fat ratio.
Premium Steaks
30+ lbsRibeye, New York Strip, and Filet Mignon (Tenderloin). The showcase steaks.
Other Steaks
Sirloin, Flat Iron, Skirt, Flank, Chuck-Eye. Great versatility for grilling, pan-searing, or stir-fries.
Roasts
30–50 lbsIdeal for slow cooking: Chuck, Rump, Sirloin Tip, London Broil, Brisket.
Stew Meat & Short Ribs
