  • Contents: One +/- 6 pound Brisket and one rack of Beef Back Ribs.

  • Flavor & Education: These cuts are the "gold standard" of BBQ. The Brisket is composed of two distinct muscles—the lean "flat" and the fatty "point"—providing two different eating experiences in one cut. The Back Ribs carry the rich, flavorful meat found between the ribeye steaks, offering a deep, savory chew.

  • How to Cook: 

    The Brisket - Season simply with salt and pepper and smoke at 225°F until the internal temperature reaches 200°F–205°F. The Secret: Because grass-fed beef is naturally leaner, wrap the brisket in butcher paper once it hits 160°F to lock in moisture and prevent it from drying out.

    Beef Back Ribs - Roast or smoke these ribs low and slow at 225°F for 3–5 hours until the meat begins to pull away from the bone. The Secret: Since these ribs carry the rich, flavorful meat found near the ribeye, avoid heavy sauces and use a light vinegar-based mop to highlight the clean, pasture-raised flavor.
